Apple salad with smoked cod

Ingredients (Serves 6):

  • 500 g green apples
  • 300 g cucumbers
  • 200 g cherry tomatoes
  • 400 g smoked cod
  • 300 g lamb’s lettuce
  • 100 g pearl barley
  • 100 g oyster mushrooms
  • 1 onion
  • 1 garlic
  • 50 ml canola oil
  • 1 lemon

Watercress dressing:

  • 50 ml vinegar
  • 1 lemon
  • 200 ml canola oil
  • 100 g watercress
  • 100 g mixed flower honey

Apple Salad With Smoked Cod


  • Peel the apples and cut them into thin pieces, sprinkle with lemon juice and canola oil.
  • Remove any bones and skin from the cod and tear the cod into small pieces.
  • Soak the pearl barley and cook it, fry the onions, garlic and mushrooms in a pan, add the barley and cook while stirring, season with salt and pepper.
  • Cut the tomatoes in half, slice the cucumbers.

Watercress dressing:

  • Put all the ingredients – with the exception of oil – into a blender. Turn on the blender and gradually add oil with teaspoons while mixing constantly. Mix until the sauce is light and fluffy.
  • Put an apple, watercress, pearl barley, tomatoes and cucumber on a plate, sprinkle generously with watercress dressing, then add smoked cod.
