Smoked goose breast

Ingredients (Serves 4):

  • Cold-smoked goose breast
  • 200 g beets
  • 1 baked apple
  • 100 g mixed sprouts

Sauce with chokeberry jam:

  • 100 g chokeberry jam
  • 100 ml lemon juice
  • 50 g honey
  • 80 g fig mustard
  • 100 ml canola oil

Smoked Goose Breast

Preparation:

  • Cut the goose breast into thin slices, mix the sprouts with the chokeberry jam sauce.
  • Marinate the beets in chokeberry juice, balsamic vinegar and honey, then heat up and caramelize in the oven.

Sauce:

  • Mix the chokeberry jam with lemon juice, honey, fig mustard and canola oil.
  • Cut the apple into round slices and bake it in the oven at 150°C for 8 minutes.
  • Sprinkle the apple with sprouts mixed with chokeberry sauce, add the goose breast slices.
