  • Fluffy pancakes with blueberry sauce


    250 ml milk
    1 egg
    1 cup wheat flour

    0.5 cup corn flour
    1 tsp baking powder
    1/4 tsp soda
    a pinch of salt
    2 tbsp sugar
    1 tbsp melted butter

    Blueberry sauce:

    1 cup blueberries
    2 tbsp sugar
    1 tbsp lemon juice
    1 tsp starch
    1/2 cup water



    In a bowl, sift the dry ingredients through a sieve and mix thoroughly with the wet ingredients.

    Put a portion of the butter on a heated dry pan and fry on both sides until browned.

    Put blueberries into a saucepan, add sugar, lemon juice, 1/4 cup of water and bring to a boil. Add starch to the rest of the water, mix thoroughly and add to the boiling blueberries.

    Pour blueberry sauce over the pancakes.
